Sweet Potato & Black Bean Tacos

Serves: 3-4



Ingredients:

  • 2 medium sweet potatoes, peeled and cubed

  • 1 can (400g) black beans, drained and rinsed

  • 1 tbsp olive oil

  • 1 tsp chili powder

  • 1/2 tsp cumin

  • Salt and pepper to taste

  • Corn or flour tortillas

  • Optional: avocado, salsa, and lime wedges for serving


Instructions:

  1. Preheat your oven to 200°C (400°F). Toss the sweet potato cubes with olive oil, chili powder, cumin, salt, and pepper. Spread on a baking sheet and roast for 20 minutes, until tender.

  2. Warm the tortillas and fill each with roasted sweet potatoes, black beans, and your favorite toppings like avocado and salsa.

  3. Squeeze lime juice over the tacos before serving.
