Serves: 2-3
Ingredients:
1 can (400g) chickpeas, drained and rinsed
2 tbsp vegan mayo
1 tsp Dijon mustard
1 tbsp lemon juice
1/4 cup chopped celery
1/4 cup chopped red onion
Salt and pepper to taste
Wraps, lettuce, and sliced tomato for serving
Instructions:
Mash the chickpeas in a bowl with a fork until slightly chunky.
Mix in the vegan mayo, Dijon mustard, lemon juice, celery, and red onion. Season with salt and pepper.
Spoon the chickpea mixture into wraps, add lettuce and tomato, and roll up tightly. Enjoy!
